Sauces, especially the standard ones, are not considered healthy, as they contain a lot of preservatives and salt.
However, the sofrito sauce, and especially its Catalan version, may hide the secret to a strong heart.
Scientists from the University of Barcelona analyzed several sauces sofrito from the Spanish supermarket shelves by means of a technique called high resolution mass spectrometry (HRMS) and concluded that it contains a number of antioxidant polyphenols - at least 40 - which protect the heart from oxidative stress and have been associated with reduced risk of cardiovascular disease and cancer.
According to Spanish scientists, the beneficial antioxidant effect of red sofit sauce is increased because the ingredients of tomato work in synergy with the other ingredients found in garlic, onion and olive oil.
The presence of onion is of particular importance as it adds cachedine.
According to the researchers, the sauces containing extra virgin olive oil had the most antioxidants because they were richer in polyphenols.
The sophisticated sauce is made in several variants but its main ingredients are tomato (the main ingredient), onion, garlic, olive oil, green pepper and possibly other vegetables.
An amount of 120 grams of soap, which can be added to macaroni, for example, gives a total of 16-24 milligrams of polyphenols and 6-10 milligrams of carotenoids, according to experts.
Note that the word soffit is of Spanish origin and means light frying.
